Origin & Terroir
From the Pyrenean valleys of Bigorre where ancient Gascon black pigs (Noir de Bigorre) roam semi-wild. These heritage pigs were nearly extinct but are now protected. Only about 5,000 hams are produced annually.
How to Enjoy
Slice very thin and savor slowly - this is rare and precious. Serve alone or with minimal accompaniment. Pair with exceptional wines - aged Madiran, Bordeaux, or vintage Champagne. A true gastronomic treasure.
Did You Know?
Noir de Bigorre pigs are black with distinctive white hooves. They live semi-wild, foraging on acorns, chestnuts, and roots. The breed was nearly extinct in the 1980s with only 34 pigs remaining! AOC protection since 2015 ensures strict quality standards.
