Origin & Terroir
From the Adour River basin in Southwest France, using salt from Salies-de-Béarn's ancient saltworks. The mountain air from the Pyrenees provides perfect curing conditions. Only specific pig breeds and production zones qualify.
How to Enjoy
Slice paper-thin and serve at room temperature. Traditional pairings include melon, figs, or simply bread. Magnificent with Jurançon wine (sweet or dry), Armagnac, or Champagne. A luxury item worthy of special occasions.

Bayonne ham dates back at least to the 1400s - Rabelais mentioned it! The Salies-de-Béarn salt is essential - its unique mineral composition creates distinctive flavor. Each ham is massaged by hand during curing and marked with the Lauburu (Basque cross).
