The Mini format was created to make the Fromager d'Affinois experience more accessible and versatile. Each small wheel undergoes the same meticulous production process as its full-sized counterpart, with the same ultrafiltration technique and careful affinage in the Guilloteau caves of the Rhône-Alpes.
