Origin & Terroir

Blue cheese has been made in France since ancient times, with Roquefort being documented as early as 79 AD. The Guilloteau fromagerie applied their ultrafiltration innovation to the blue cheese tradition, creating a uniquely smooth and creamy blue that breaks down barriers for those who find traditional blues too intense.

How to Enjoy

Pair with ripe pears, walnuts, and honey for a classic combination. Melt into sauces for steak or pasta. Pair with a sweet Sauternes, a vintage Port, or a rich Amarone. Also exceptional crumbled over a warm beet salad or stirred into risotto at the last moment.

Blue cheese gets its distinctive veining from Penicillium roqueforti mold, which is carefully introduced during the cheesemaking process.
