The Product

Pig's snout Lyonnaise is a traditional Lyonnaise salad made with tender pieces of pig's snout, mixed with crunchy gherkins and onions, all dressed with a mustard and parsley vinaigrette. It's a charcuterie dish, often served cold or at room temperature, appreciated for its contrast of textures and its tangy, spicy flavor.

Origin & Terroir

From the French Basque Country and Béarn regions in the western Pyrenees, made exclusively from the milk of local Manech and Basco-Béarnaise sheep grazing mountain pastures.

How to Enjoy

Serve with cherry preserves (confiture de cerises noires) - the traditional Basque pairing. Pairs with Irouléguy wine or Spanish Rioja. Also excellent with walnuts and honey for a cheese course.

Did You Know?

Ossau-Iraty is one of only two French AOP sheep cheeses. Production dates back over 3,000 years - cave paintings show ancient shepherds making cheese! The name combines two Pyrenean valleys.
