Soubressade Piquante is a spicy, spreadable Spanish cured sausage from the Balearic Islands, especially Mallorca, made from minced pork, salt, and lots of paprika (pimentón), giving it a distinct red color and fiery kick, typically enjoyed spread on bread, grilled, or in cooking for a flavorful Mediterranean taste.
Origin & Terroir
From the town of Selles-sur-Cher in the Loire Valley's Sologne region, where this distinctive ash-coated goat cheese has been made since the 19th century. PDO protected.
How to Enjoy
Serve at room temperature on a cheese board or warmed on salad. The delicate ash rind is edible and adds subtle flavor. Pairs beautifully with Sancerre or other Loire Valley whites.
Did You Know?
The gray-blue ash coating is made from vine ash and helps regulate moisture during aging. As it ages, the flavor develops from mild and milky to tangy and complex.
