MORBIER
The Product
A French specialty of smoked charcuterie, a rustic pork sausage, recognizable by its distinctive resinous aroma, its amber color, and its wooden peg at one end, protected by a Protected Geographical Indication (PGI).
Origin & Terroir
It is slowly smoked in traditional "tuyés" of the Haut-Doubs region using resinous wood sawdust, giving it a firm texture and a powerful taste.
How to Enjoy
It is best enjoyed cooked, often poached in simmering water, and pairs perfectly with dishes like sauerkraut or potatoes.
Did You Know?
The black ash line through Morbier's center was originally practical - farmers protected morning milk with ash before adding evening milk. Today it's purely traditional, using food-safe vegetable ash.
