CANTAL
The Product
Cantal aged 3-7 months ("entre-deux" - between young and old), offering balanced flavor. France's oldest cheese, similar in style to Cheddar but with unique French character.
Origin & Terroir
From the Cantal mountains in Auvergne, made exclusively from Salers or Aubrac cows grazing volcanic pastures. The harsh climate and altitude create robust, flavorful milk.
How to Enjoy
Excellent for cooking (aligot, truffade) or cheese boards. The nutty, tangy flavor pairs with Auvergnat wines or Beaujolais. Try it grilled in sandwiches or grated over soups. Versatile for both melting and eating fresh.
Did You Know?
Pliny the Elder praised this cheese in Roman times! It's France's second-largest AOP cheese by volume. "Entre-deux" offers the best balance - more flavor than young but still creamy. Wheels weigh 35-45kg and are pressed in tall cylindrical molds.
