Did You Know?

Rosette de Lyon is one of France's largest sausages (300-600g). The coarse grind (10-12mm) creates distinctive rustic texture. It ages minimum 3-4 weeks. In Lyon's traditional bouchons (bistros), rosette is sacred - sliced thick and simply presented.
