SAUCISSE SECHE D'AUVERGNE
The Product
A charcuterie specialty from Southwest France, made from a mixture of duck and often pork meat, seasoned (salt, pepper) and then slowly dried, offering a unique, rich, and melt-in-your-mouth flavor, perfect for appetizers or rustic dishes. It is prized for its firm texture and powerful aroma, the result of extended curing, with variations including 100% duck versions or those with additions such as figs.
Origin & Terroir
From the Auvergne region in central France, protected by PGI status. The volcanic highlands provide ideal conditions for air-drying, with pure mountain air and cool temperatures.
How to Enjoy
Slice for aperitifs or charcuterie boards. The robust flavor pairs well with Auvergne cheeses (Cantal, Saint-Nectaire) and local wines. Also excellent in traditional Auvergnat dishes.
