The Product

Small pieces of lean pork belly, spiced then browned and preserved in fat, rillons are considered in Touraine as the jewel of charcuterie.

Origin & Terroir

From Touraine and Sarthe in the Loire Valley, where rillons (also called rillauds) have been a traditional delicacy since medieval times. The browned, preserved pork belly pieces are considered the region's finest charcuterie.

How to Enjoy

Serve warm or at room temperature with green salad and mustard. Excellent crumbled over lentils or white beans. Pairs beautifully with Loire Valley wines - try a Chinon or Bourgueil.

Did You Know?

Rillons are sometimes called 'the jewels of Touraine.' Unlike the spreadable rillettes, they retain their chunky, caramelized character. The browning process creates rich, almost sweet flavors.
