The Product

Traditional Basque sheep's milk cheese from the Pyrenees. Hard, nutty, and slightly sweet, this is one of France's oldest cheese traditions.

Origin & Terroir

Made exclusively in the Béarn and Basque Country regions from milk of local sheep breeds (Manech and Basco-Béarnaise). The Pyrenean pastures give the milk distinctive character.

How to Enjoy

Serve with cherry preserves (confiture de cerises noires), the traditional Basque pairing. Excellent with Irouléguy wine or Spanish Rioja. Grate over pasta or enjoy with walnuts and honey. Versatile for cooking or cheese boards.

Did You Know?

Ossau-Iraty is one of only two French AOP sheep cheeses (the other is Roquefort). Production dates back at least 3,000 years - cave paintings show shepherds making cheese! The name combines two Pyrenean valleys: Ossau (Béarn) and Iraty (Basque).
