The Product

"Jésus sausage" (or Saucisson Jésus) is a prestigious, large, dry-cured French sausage from the Lyon region, known for its distinctive pear shape (resembling a swaddled baby Jesus) and rich, meaty flavor developed over 8-10 weeks of aging, made from high-quality pork with salt, pepper, garlic, and a natural casing covered in white penicillium mold. It's a premium charcuterie, traditionally enjoyed sliced with red wine or as part of a platter.

Origin & Terroir

Traditional to Lyon, France's gastronomic capital and charcuterie heartland. The name possibly references the sausage's shape resembling the swaddled Christ child. Made following centuries-old Lyonnais recipes.

How to Enjoy

Slice thick (8-10mm) to appreciate the coarse texture. Essential on any serious French charcuterie board. Pairs with Beaujolais, Côtes du Rhône, or local Saint-Joseph wine. Serve with cornichons and mustard.
