ANDOUILLE DE GUEMENE
The Product
An iconic Breton specialty distinguished by its unique concentric ring pattern when sliced. Made from pig intestines carefully arranged in layers, then slowly smoked to create a complex, intense flavor.
Origin & Terroir
Produced exclusively in Guéméné-sur-Scorff in Brittany's Morbihan region. This PGI-protected product benefits from Breton pork raised on traditional family farms and the region's artisanal smoking techniques.
How to Enjoy
Best appreciated cold, sliced thin to showcase the beautiful circular pattern. Serve with rye bread, salted Breton butter, and pickled onions. Traditional accompaniment is Breton cider or a crisp white wine.
Did You Know?
Creating the distinctive ring pattern requires inserting intestines inside one another like Russian dolls - a technique that takes years to master. Authentic Guéméné andouille can contain 30-40 layers. The annual Andouille Festival attracts thousands of visitors.
